Vegan Recipes Challenge

This is the first day of Ivelina’s 30 day Vegan Recipes Challenge which I decided to join yesterday as soon as she told me about it.  In my teens and twenties I was a vegetarian so being a vegan is much easier than I thought it would be.  I tasted some of the tasty Vegan meals that Iva cooks as well as her delicious salads.  I have been a vegan since 1st March.  I began with her raw food challenge and did it for only three days but it helped me to change my eating habits and I haven’t looked back since. Sometimes when I am feeling lazy or in a hurry I just make a quick curry , biriani or stir fry.  I have become addicted to Iva’s cosmopolitan burgers.  Yesterday we had chick pea burgers with salad and chips.  Doesn’t sound very tempting – but it was absolutely delicious. We made pigs of ourselves – pardon the pun. You will be able to find that recipe in her blog.   In the beginning I drank herbal teas but I wasn’t very keen on black coffee.  Now I am putting Oatley which is milk made with oats in my coffee and I have acquired a taste for it.  You can  find Oatley in Sainsburys.  Smoothies and various juices are also a great way to ensure that you are getting all the nutrients you need.

At first I substituted peanut butter for butter but now I am also using Pure which is a blend of vegetable oils.  There is also a vegan mayonnaise which tastes just like “normal mayonnaise” and I use it on my salads and burgers – yummy.  I also have oatley with my porridge so I don’t feel deprived in  the least.  If you really miss drowning your dinner in gravy the good news is that you can use the Bisto gravy which is in the red package.  Although it has a meaty flavour there are no animal products whatsoever in it.  I became a vegan because I abhor cruelty to animals and I don’t want to eat the hormones and chemicals which are pumped into livestock nowadays.

I used to have a Greek restaurant in N Ireland and I enjoy the Mediterranean diet very much.  There are so  many delicious Greek foods which are Vegan so I decided to share a Greek recipe for the next thirty days.  Hope you enjoy them – I know I will.

Vegan Recipes Challenge

Vegan food is never boring and I find it interesting to create new versions of pasta dishes, rice dishes, soups,, stews  and salads.  Pulses such as beans and lentils are filling and can be used in a variety of ways with different blends of herbs and spices.  Bean soup, bean burgers, chilli beans, a dip made with beans are just a few of the possibilities.  My mouth is watering even at the thought of them.

I am a beginner as far as veganism is concerned.  I don’t know exactly what vitamins and proteins are in the various vegetables and fruits but I am lucky enough to have Iva to advise me.  I am sure she will include lots of information about the health giving qualities of many of them in her 30 day challenge.  It’s a new way of life for me and I am enjoying these new tastes and mouth watering smells in my kitchen.

You can of course include exotic fruits such as mango and kumquat and blueberries but these can be expensive.  You can have them as a treat but they are not necessary.  Local home grown fruits and vegetables are just as nutritious and delicious so being a vegan doesn’t have to be expensive.  In fact I have found it more affordable than the food I used to eat.

My first recipe is called fasulakia – It is a Greek meal and the main ingredient is green beans although I also love it with white beans.   It is usually eaten  hot or cold with bread and/or salad.  Don’t stand on ceremony – soak your bread in the sauce and mop up every last delicious drop of it.

FASULAKIA

Ingredients

1/2 cup of Olive Oil

1/2 kilo Onions

1/2 kilo Potatoes

1/2 kilo Tomatoes (or  tinned tomatoes)

1 kilo green beans (fresh or frozen not tinned)

4 tablespoons Tomato Puree

4 cloves Garlic

Green Beans

1 Bunch of Parsley  (or dill if preferred)

1/2 cup wine (optional)

1 large or 2 small carrots (optional)

Pepper and Salt to taste

Sautee the onions in the olive oil until translucent and then add the crushed garlic and potatoes (and carrot)

Add the rest of the ingredients and simmer over a low heat for about 30-40 minutes or until the potatoes are soft.

Serve hot with white bread or wholemeal if you prefer or  serve cold as a salad
